Make Your Own - Delicious Knead-Free Bread!

Brad has been making this bread every three days or so lately because it's just so easy! Full disclosure though, it is about a 20 hour process, so think ahead. But sooooooo worth it.

You'll need a cast iron dutch oven, about five quarts or so. They range from $70 to $400 depending on brand and where you get it. (Ikea has an oval one for $70. WELL worth the investment though!)

What You'll need:

  • 3 cups bread flour (easy to get at any grocery store)
  • 1/4 tsp. regular yeast
  • 1 1/4 tsp table salt
  • 1 1/2 cups room temp water
What to do:

1. In large bowl combine all dry ingredients
2. Add water and mix in to dry ingredients till a wet sticky dough is formed (30 seconds mixing tops)

3. Cover the bowl with clingfilm and put somewhere to rise for 12-20 HOURS, yup. We usually aim for the 20 side of this
4. Scrape sticky dough out of bowl onto floured countertop
5. Dust dough with flour and fold it into itself a few times so that it looks nice
after about 20 hrs

6. Put dough in the middle of a floured towel and cover for a second rise of about 90 minutes
7. Pre heat oven to 485 F with dutch oven in it
8. Once dough has about doubled in size carefully pull the dutch oven out and put the dough in it, return dutch oven to oven with lid on
9. After 30 minutes take the lid off and cook another 10 or 15 till it looks done
10. Take out of pot and let cool for a bit before cutting into bread

You can now make your own tasty bread! Have fun.
